Ranger Cookies


One of my favorite cookies, chewing and crispy at the same time...What??

Ingredients:
1 c butter
1 c brown sugar
1 c granulated sugar
1 t vanilla extract
2 lg eggs
2 c flour
1/2 t baking powder
1 t baking soda
1/2 t salt
2 c oatmeal
1 c coconut
2 c Rice Krispies cereal
1 c Toffee Bits or Cinnamon Chips - optional
Directions:
Preheat oven to 375°F.
In mixing bowl, cream butter, brown sugar and sugar. Add vanilla extract; beat until creamy.
Mix in eggs, one at a time.
Stir together dry ingredients and add to batter.
Stir in oatmeal, coconut, cereal, & chips.
Roll into small balls and flatten slightly.
Bake on ungreased cookie sheets for 10-12 minutes or till light brown.
Yield: 4 dozen
